Running barefoot, drinking from the garden hose and certainly making the most of the extended daylight hours. When it came time to watch the fireworks we would lay in the grass and stare at the sky with wonderment. A simple joy at a simple point in your life. Nothing quite compares to that. I still enjoy this holiday for the same reasons. It is a time to remember our nation's history. In it's simplest form, the 4th of July brings together friends, families and recipes for a great American tradition. Eating. I am usually given the responsibilities of bringing a bag of chips or an adult beverage just for the sake of potentially sparing my dearest loved ones from food poisoning from one of my experimental runs in the kitchen. I sure do try though. Being the ever persistent overachiever, I faced my fears of the spatula and went to work. This quickly became one of my favorite 4th of July recipes! This is fluffy, light and no-bake! That's right! You can enjoy the day and the house without cranking up the oven and sweating your way through this delight! This recipe makes 6 -7 mini servings so plan accordingly. Many thanks to this website for showing me that I can bake! ;)
Ingredients:
Graham Cracker Crumble 1 1/2 cups graham cracker crumbs (about 10 full sized crackers) 1/3 cup butter, melted 1 Tablespoon sugar Fluffy Cheesecake 1- 8oz block cream cheese 1/2 cup powdered sugar 2 teaspoons fresh lemon juice 2 tablespoons milk (any fat content) 2 cups cool whip, or freshly whipped cream Fresh berries (strawberries and blueberries shown)

Lastly, a classic and irreplaceable 4th of July recipe involves Jell-O! Who could do without?! This is beautiful looking ,easy and a classic that you will surely hit a home run with this year!
Ingredients:
4 boxes (3-ounces each) Jello (or store brand gelatin dessert) in different colors 14-oz can sweetened condensed milk 2 envelopes unflavored gelatin (Knox) Water
Directions:
- For each flavor, dissolve one box of Jello in 1 cup of boiling water. Pour into a square container that is about 6 to 8" square and chill at least 3 hours, or overnight. (Try to use the same size for all four so that the blocks will come out the same. In this case the smaller the better - I used 8" pans and felt my "blocks" were a little too flat.)
- After chilling the flavors, cut them into small blocks.
- Carefully mix the blocks in a 9x13-inch pan.
- In a separate bowl, sprinkle 2 envelopes of unflavored gelatin into ½ cup cold water. After the gelatin blooms, add 1½ cups boiling water and dissolve. Add the can of condensed milk. Stir and let cool. Pour cooled milk mixture over Jello blocks in 9x13 pan. Skim off any small bubbles that are created when you pour the condensed milk on the Jello pieces. Chill overnight or at least 3 hours until firm.
- Cut into blocks or shapes and serve.
