Popsicles in Assorted Flavors

There’s nothing quite like a cool popsicle to survive the hot, sweltering, summer days. I’d even argue that melted popsicles all over ones face is basically a right of passage from childhood. Despite their delicious appeal, most popsicles are loaded with enough sugars, dyes, and artificial ingredients to make any mom worried about overloading their child for an inevitable late-afternoon meltdown. An article by Live Strong (Lance Armstrong’s brand and company) also advocates homemade popsicles, saying “Make your own popsicles. This way you can control the ingredients and ensure that your popsicles are healthy and low in calories.” To quench the thirst for an iced-lolly (as our British friends call it), without loading up on the ‘bad stuff,’ we’ve compiled a list of the best healthy and delicious homemade popsicle recipes on the web. Red, White, and Blue Popsicles

1) Red, White, and Blue Popsicles

(Image + recipe via Yahoo) Ingredients

  • 1 cup plain yogurt
  • 2 tablespoons honey
  • 1 pint blueberries
  • 1/2 pound strawberries, hulled

Directions Combine yogurt and honey. Pour evenly into popsicle molds. Mash separately blueberries and strawberries. Pour blueberries into popsicle mold (make sure to leave room for the last layer of strawberries.) Finally, pour strawberries in to the top. Insert a popsicle stick and freeze.

Strawberry Shortcake Greek Yogurt Popsicles

2) Strawberry Shortcake Greek Yogurt Popsicles

  • 1 cup Chobani Non-Fat Vanilla Greek Yogurt
  • ½ cup milk
  • ½ tsp ground vanilla beans
  • ⅓ cup strawberries, chopped
  • ⅓ cup shortcake, crumbled

Directions Mix the yogurt, milk, and ground vanilla beans together until completely smooth. Gently mix in the strawberries and shortcake. Divide among popsicle molds, and place in the freezer. After 1 hour, insert popsicle sticks. Let freeze completely, 3-4 hours.

Dark Chocolate Frozen Kiwi Popsicles

3) Dark Chocolate Frozen Kiwi Popsicles

  • 6 large kiwis, peeled, and cut into 1/3"-1/2" thick rounds
  • 1 cup dark chocolate or semi-sweet chocolate chips
  • 1/4 cup coconut oil
  • popsicle sticks or lollipop sticks

Directions Slice the peeled kiwis into rounds with a lollipop stick in each one. Place on a tray lined with wax paper or parchment. Freeze for at least 4 hours. In a glass bowl, melt the chocolate and the coconut oil over a pan of simmering water. Dip each frozen kiwi into the melted chocolate. The chocolate will harden within a few moments of being dipped.

Watermelon Lime Popsicles

4) Watermelon Lime Popsicles

  • 2 cups 1-inch cubed watermelon
  • 2 tbsp fresh-squeezed lime juice
  • 6 mint leaves, chopped

Directions Blend all ingredients together in a blender. Pour mixture into mold and insert stick. Freeze until solid. Run warm water over mold to release popsicle.

Red Bean Iced Popsicles

5) Red Bean Iced Popsicles

  • 1 1/2 cups canned sweetened, mashed adzuki beans
  • 1/2 cup heavy cream
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1/8 teaspoon fine salt

Directions Place 1 cup of the beans and the cream in a large bowl and mix until evenly combined. Place the remaining 1/2 cup beans, milk, sugar, and salt in a blender and process until smooth. Pour into the bowl with the bean-cream mixture and stir to combine. (The beans will sink to the bottom.) Fill the pop molds halfway with the liquid part of the mixture. Use a spoon to evenly divide the beans left on the bottom of the bowl among the molds. Freeze until solid, at least 6 hours. Looking for more healthy and delicious recipe ideas?
