Eating healthy in the winter can be hard; it’s cold outside; the sun goes down early. All I ever want to do is eat carbs and hide under my heated blanket! However, as great and amazing as eating nothing but carbs for three months sounds, it’s just not healthy. Even in the winter, it’s important to fuel ourselves with healthy nutrients. In fact, according to Weight Loss Resource, an online community for healthy living in the UK, eating well and working out can give us the natural boost to banish seasonal blues that happen in the winter.

Tortellini Spinach Soup

Tortellini Spinach Soup

This scrumptious soup is perfect for a cold winter’s day. With ingredients like vegetables and warm tortellinis, this soup will provide you with ideal nutrients and placate your appetite. Read on for details on making this hearty meal!

Ingredients

  • 1 package (9-oz.) BUITONI Refrigerated Three Cheese Tortellini (9 oz.)
  • 2 packages (9-oz.) STOUFFER'S Creamed Spinach, defrosted according to package directions
  • 3 1/2 cups water
  • 1 envelope (1.4-oz.) dry vegetable soup and recipe mix

Directions

Heat water and soup mix in large saucepan to boiling; reduce heat. Add tortellini and creamed spinach; cook for 5 minutes or until tortellini is tender. Top each serving with Parmesan cheese, if desired. (Recipe via Meals.Com)

One of our favorite things about winter meals? Roasting. We love it for our meats and we love it for our veggies. This recipe gives you the secret to making the perfect roasted veggies - hey, it’s harder than it looks! Prepare as a side dish for a bigger meal or give yourself a boost of wellness by using this recipe as the main dish.

Roasted Vegetables

Ingredients

  • 12 cups of vegetables cut into similar size pieces. Use a combination of hard (root) and softer vegetables, such as carrots; red potatoes; red, yellow, orange peppers; onion wedges; whole garlic cloves; mushrooms; zucchini; green beans; etc.
  • 3/4 cup Olive Oil
  • 1/8 cup Worcestershire Sauce plus 1 Tbsp
  • 1 1/2 tbsp Paprika
  • 1 tbsp Garlic Salt

Directions

Cut vegetables into similar size pieces. Keep root vegetables separate from softer vegetables. Mix together olive oil, Worcestershire sauce, paprika and garlic salt. Pour over vegetables. Place root vegetables on cookie sheet and bake at 425 degrees for about 15 minutes or until they begin to soften. Add in softer vegetables and turn vegetables on sheet making sure they are all coated in liquid mixture. Bake another 15 minutes or until the veggies are fork tender. (Recipe via I Heart Nap Time)

Spinach Garlic Raisin Salad

Nom, nom, nom - that’s the sound of us lovvvving this Spinach Garlic Raisin Salad. With few ingredients, this salad is an easy dish to whip up on a cold winter night. Plus, it’s delicious and nutritious!

Spinach Garlic Raisin Salad

Ingredients

  • 1 tbsp Olive Oil
  • 2 Plump Cloves of Garlic
  • ⅓ cup Golden Raisins
  • ¼ cup Water (or you can use chicken or vegetable broth)
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • 9 ounces Fresh Spinach Leaves (rinsed)

Directions

Measure the olive oil into a large saucepan or dutch oven. Add the garlic. Put it over low heat. Spread evenly. Let it warm up for 5 minutes (don't allow the garlic to brown.) Turn the heat to medium-high and add the raisins, water, salt and pepper. Stir and cook for a minute before adding in the spinach. Remove from the heat. Done! (Recipe via Cook The Story)
