Enter in these Pumpkin Protein Bites by Hummusapien. These bite sized goodies are packed with protein so it's ok if you have a couple more than you’re supposed to. Everyone deserves a cheat meal right? Especially if what you're eating has a good source of protein and fiber while also being vegan and gluten free.

  • 9 Medjool dates, pitted (place in bowl of warm water if hard and dry)
  • ½ cup unsweetened applesauce
  • 3 tbsp pumpkin puree
  • ¼ cup almond milk
  • ½ tsp vanilla extract
  • ½ cup coconut flour
  • 1 scoop vanilla brown rice protein powder (if you don’t mind dairy, you can use any vanilla whey protein powder)
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 2 tbsp cacao nibs or chocolate chips (optional)

Directions:

  1. Place dates, applesauce, pumpkin, almond milk, and vanilla in a large food processor. Blend until pureed. You may need to scrape down the sides as needed
